Under thirty, Severi started his apprenticeship at Restaurant Olo at just 13 years old, and from there his journey has continued toward his current entrepreneurship, passing through various Helsinki fine dining restaurants.
The restaurateur who recently opened the new Ravintola Brasa (Aleksanterinkatu 22, 00170 Helsinki) is a passionate wine enthusiast and connoisseur.

Weingut Winter Kalkstein Riesling

Weingut Winter Kalkstein Riesling is an enjoyable wine pairing for classic cuisine dishes, fish, and shellfish. This wine showcases the uniqueness of Dittelsheim in a wonderful way. Juiciness and minerality meet. This wine is enjoyable right away, but it's also well suited for years of cellaring.
The taste is dry, subtly citrusy, crisply acidic, refined, balanced, and long-lasting. High quality.
The carefully selected grapes for this magnificent food wine have grown in very chalky soil around Dittelsheim. The vineyards have either Premier Cru (Erstes Gewächs) or Grand Cru (Grosses Gewächs) classification.
Skin contact before fermentation gives Weingut Winter Kalkstein Riesling additional dimensions. Alcoholic fermentation is done with natural yeasts from the grape skins and takes place in a steel tank, where the wine is also aged.

Parés Baltà Mas Elena
The best from Spain, for gourmets. Enjoyed only in the best company
Parés Baltà Mas Elena is an excellent choice for summer delicacies, such as grilled meat, lamb, game, meaty sausages, grilled fish, smoked salmon, full-flavored cheeses and—yes—dark chocolate with raspberry filling or flavoring.
In taste, the wine is full-bodied, dark berry-like, fairly tannic, cranberry-ish, spicy, and peppery. The structure is fine and the balance exemplary. The gentle tannins have just the right amount of roughness, and the aromas from the nose linger in the long finish.

Mas Elena is named after Maria Elena, the oenologist wife of Joan Cusiné, the eldest son of the Parés Baltà family business. The wine has been aged for eight months in two- or three-year-old American and French barrels. Soft Merlot combines with the structure and spiciness provided by the two Cabernets. Empowering each other, they form the perfect balance of roundness and complexity.
