Segredos de São Miguel Organic

Segredos de São Miguel Tinto pairs beautifully with pasta dishes, lamb and beef, richly flavored vegetable bakes, and cheeses. It is also an excellent companion to Mediterranean cuisine.

Segredos de São Miguel is a tribute to the culture and traditions of the people of the region. The Touriga Nacional, Alicante Bouschet, and Aragonez grapes were grown in soils dominated by clay and schist. They were harvested mechanically at night to ensure cool grapes. The grape stems were completely removed, and the grapes were gently pressed using a pneumatic press. A 48-hour skin contact period preceded fermentation in temperature-controlled tanks at 21–25 °C. Malolactic fermentation took place in stainless steel tanks, with oak staves adding flavor and structure to the wine. 20% of the wine was aged in 400-liter oak barrels.
