The grapes for Domaine des Sénéchaux’s Châteauneuf-du-Pape grow on clay- and sand-based, stony soils. The stones would be far too large for a sauna stove. Thyme and lavender accompany the wine. The stony terrain evens out the temperature differences between day and night, which accelerates the ripening of the grapes. A traditional blend of dark, thick-skinned grapes forms the base of this wine on this classic estate. Grenache Noir dominates, giving the blend its lifeblood with dark, warm, and sweet tones.
