Sour cocktail: Stiggins Fancy Pineapple Sour

The Stiggins Fancy Pineapple Sour cocktail is a tropical treat for fans of dark rum and sour-style drinks, with handcrafted pineapple rum as its star ingredient. The drink is the result of a collaboration between Alexandre Gabriel and cocktail historian David Wondrich, who worked together to create a new drink for the Tales of the Cocktail festival. In sour drinks, lemon or lime juice brings acidity to the drink, which is balanced with something sweet—in this case, agave syrup. The Stiggins Fancy Pineapple Sour features a foam created with egg white.

Stiggins Fancy Pineapple Sour

Ingredients:

4 cl pineapple rum

4 cl pineapple juice

2 cl lime juice

2 cl agave syrup

1 egg white

Instructions:

Measure all ingredients into a shaker or a lidded glass jar. Shake vigorously to create a nice foam. If you prefer, you can leave out the egg white entirely. You can strain the drink and serve it without ice, or pour it straight from the shaker into the glass with ice (dirty shaking). Garnish with orange peel and express the essential oils from the peel over the drink.
