Pairs especially well with grilled meat and vegetables. Due to its nice acidity, ripe cheeses are a good companion for it.

Camino Romano is an organic wine, made with respect for the area’s soil, climate and the Tinto Finoa grape variety. The grapes come from vineyards, where the vines are, on average, between 15 and 30 years old. The wine has been matured for 8 months times in French oak casks that have been used two to three times. The wine has not been stabilised at all and the filtration has also been done very gently, in order to keep the taste as natural as possible and to express its origin as well as possible.

Full-bodied, tanninous, dark notes of cherry, spicy, oaky

Producer story

Dominio Romano began when the Cusiné family, owners of the Parés Baltà winery, initiated a new project in Ribera del Duero in 2005, following the guidelines of the area's first grape growers, the Romans. Their aim was to select old Tinto Fino vines from different zones, grown as bushes without irrigation. In the cellar, the goal is to transfer the essence of the native Tinto Fino grape from the best vineyards, respecting tradition and the environment. Dominio Romano owns a few hectares of vineyards in the area but also purchases grapes from like-minded farmers who tend to their vineyards as they would their gardens. The region's soil is stony and clayey, and the low bush vines grow close to the ground for protection against frost. The climate presents extremes: winter can see temperatures as low as -20°C with dry air and ample winds, while the Mediterranean summer days reach temperatures of 25-35°C, cooling down to 3-12°C at night. Rainfall is scarce. Winemaker Jordi Fernandez conducts relentless research to craft wines that narrate the estate's vinous history.
