The Parés Baltà 'b' Brut organic sparkling wine, equipped with a fresh new look, emerged as a winner. It's made using the traditional method from traditional cava grapes Parellada, Macabeo, and Xarel·lo. Parellada dominates this blend and comes from the highest mountains of Penedès, giving the wine floral freshness thanks to the special microclimate of the growing area. Macabeo brings fruitiness and Xarel·lo body. The nuance and harmony of organic wine characterize this sparkling wine. Organic isn't cheap to produce, but even considering that, this wine has an exemplary price-quality ratio. Brut 'b's lightly toasted aroma offers green apple, apricot, citrus, white currant, herbs, flowers, and minerals. Its very dry taste is crisply acidic, cleanly fruity, floral, nuanced, and balanced.

Páres Baltà Cava Pink is like summer poured into a glass

The pale pink Parés Baltà Cava Pink Brut is made using the traditional bottle fermentation method. The wine has been allowed to develop on the lees in the bottle for 18 months. Cava Pink is an organic cava modernized with Garnatxa, also suitable for vegans.

Pares Balta vineyard

The Parés Baltà winery was founded in 1790 and is still a family business. The first grapevines around the estate were planted in 1790, and nearly 200 years later, in 1978, Joan Cusiné Hill acquired the estate for himself. Today, Parés Baltà winery is run by his grandchildren, Joan and Maria's sons Joan and Josep Cusiné Carol. Winemaking is handled by Joan and Josep's wives, Maria Elena Jiménez and Marta Casas. Wine is made with great heart, and the charmingly sweet Cusiné family warmly welcomes all wine lovers to their estate, located just a short distance from Barcelona.

Parés Baltà's wines are actually bottled philosophy. The family business has a firm belief that in addition to human work, the surrounding world, including the entire cosmos, affects the wines. Harmonious relationships with other people, deep respect for nature, endless study of the annual cycle and various interactions are as important as the chosen grape varieties, vine care, or weather and climate.

The Cusiné Carol family's vineyards are located in five villages about 10 kilometers from the Mediterranean, in the varied terrain of Penedès, in valleys and mountains. The vineyards are located at different elevations above sea level, between 176 and 749 meters, and additionally there are high hills between them, which means grapes are grown in both Mediterranean and continental climates as well as their intermediate forms. Some of the vineyards are located in the middle of nature reserves, where the grapes get to grow in almost magical peace. Parés Baltà cultivates fourteen different grape varieties. With careful selections, they create characterful, great wines.

Environmental friendliness is naturally one of Parés Baltà's core values. In winter, over a thousand sheep graze on the vineyards, so artificial fertilization isn't needed. Production is carried out biodynamically and the vineyards are Demeter-certified. In organic farming, the use of chemicals is avoided and bee activity is supported as pollinators of the vines during their flowering season. Some of Parés Baltà's vineyards are located on centuries-old terraces, where wild boars, foxes, hares, and golden eagles are also a common sight. The vineyards are not artificially irrigated but rain is allowed to handle this work. The first biodynamic experiments on selected vineyards were made in 2011, and a year later, encouraged by positive results, biodynamic farming began to be applied to all of Parés Baltà's vineyards. Biodynamic farming is based on biodiversity and astronomy and seeks to respect the cosmos's participation throughout the entire process.

Pares Balta Cusine Family

The Parés Baltà winery has a strong connection to Finland. In May 1971, Spaniards Joan and Maria Angels Cusiné got married. After the wedding, they acquired a camper van and left for two months to Scandinavia on their honeymoon. At the end of an eventful trip, they arrived in Finland, which both fell head over heels for. Finnish culture, people, and food made an indelible impression on the couple. Nine months later, the young couple's first child arrived in the world. From these events began the Cusiné family's special relationship with Finland.
