Mushroom Risotto Appeals to Many

Mushroom risotto is a restaurant favorite that you can cook surprisingly easily in your home kitchen. Here's an easy mushroom risotto recipe that's perfect for beginners too!

Off to the mushroom forest and risotto-making! If the mushroom forest doesn't deliver, the store's "mushroom forest" works just as well.

Either way, here's a tried-and-tested recipe. It makes about 3-4 servings depending on how hungry your diners are.

Easy Mushroom Risotto

  • 200 g mushrooms
  • 1 onion
  • lime or lemon juice
  • about 4 tbsp butter
  • 3 dl arborio rice (risotto rice)
  • 1 dl dry white wine
  • about 8 dl vegetable stock
  • ground black pepper
  • 1-2 dl grated Parmesan or Grana Padano
  • herbs if desired, such as parsley

Here's how:

You can make risotto in a high-sided frying pan or alternatively in a pot. Chop the mushrooms, finely dice the onions, and sauté in butter in the frying pan. When they're cooked, remove the mushrooms and onions from the pan and set aside in a bowl. Drizzle with lime or lemon juice.

Lower the heat, add butter to the pan, and add the risotto rice. Sauté the rice briefly, stirring constantly. Be careful not to burn the rice! You'll recognize the start of burning when the rice begins to turn brown. If this starts to happen, quickly add a bit of liquid (such as vegetable stock or water) and remove the pan from the hot burner to stop the rice from browning. If only a little browning occurred, no worries—still usable!

Keep the temperature at medium heat or raise it slightly, depending on your stove. Add the dry white wine to the pan and let it absorb into the rice. Once the wine has absorbed, start adding hot vegetable stock to the pan one ladleful at a time, stirring constantly. Add the next ladleful only after the previous one has absorbed into the rice. Keep adding stock to the pan until the rice is soft and creamy but still has some bite (al dente). Cooking usually takes about 15–20 minutes.

Toward the end of cooking, add the sautéed mushrooms and onions, ground black pepper, plenty of Parmesan or Grana Padano cheese, and stir. The risotto should remain slightly runny. Add fresh herbs and/or more cheese on top if desired.
