Gloria Grillo Doc is a fresh white wine from Sicilian Grillo grapes, with a pinch of Zibibbo and Catarratto. Their juice was fermented in refrigerated steel tanks, after which the wine was allowed to develop for three to six months on the lees before filtering and bottling. Grillo is becoming a more and more popular high quality, richly flavoured grape variety from Sicily. It is a relatively young variety and, according to DNA research, it is a natural cross between Catarratto Bianco and Muscat of Alexandria.
