At the heart of a fresh recipe that values local nature are, of course, juniper berries, spruce needles and pine shoots. Late summer heather and blueberry shoots add a light fruity nuance on the palate. Lemon and orange peel adds freshness. Ginger, nutmeg and iris root bring fullness to the resinous core flavour. In the background, there is a surprising taste of smoky juniper and the gentle minerals of a seashore – as if straight from the North.
