Moist Mocha Squares
- 4 dl sugar
- 4 eggs
- 200 g melted baking margarine
- 6 dl all-purpose flour
- 4 tbsp cocoa powder
- 3 tsp baking powder
- 2 tsp vanilla sugar
- 2 dl milk
Frosting:
- 6 tbsp brewed coffee
- 100 g melted baking margarine
- 2 tsp vanilla sugar
- 4 tbsp cocoa powder
- 7 dl powdered sugar
- nonpareils or sprinkles for decoration

Instructions:
Preheat the oven to 200°C. Whisk the sugar and eggs until fluffy. Fold in the melted margarine.
In a separate bowl, mix together the all-purpose flour, cocoa powder, baking powder, and vanilla sugar, then gradually add the mixture to the batter. Don't overmix, or the batter will lose its fluffiness. Finally, add the milk. When the batter is smooth and thick, spread it onto a baking sheet lined with parchment paper.
Bake in the oven at 200°C for about 10–15 minutes. Check for doneness.
Then prepare the frosting. Mix the cold coffee and melted margarine together. Add the vanilla sugar, then the cocoa powder, preferably through a sieve, stirring constantly. Then mix in the powdered sugar the same way. Spread the frosting on the mocha squares only after they've cooled slightly, so the frosting doesn't soak in. Finally, decorate with your chosen toppings and cut into squares. Done!
