Cluster Flock Sauvignon Blanc is a delicious aperitif and a perfect summer gathering wine. It pairs wonderfully with goat cheese, white meats, mussels, Asian cuisine, creamy pasta dishes, and seafood salads.
Sheep are to thank for this wine. A flock of unattended sheep wandered into the vineyard and ate half of the grapes. What could have been a disaster turned into a great success — the reduced yield resulted in a dense and flavorful wine. The juice, made from young vines growing in gravelly and silty soils and harvested mechanically, fermented in cooled stainless steel tanks and matured for a time on the lees. The result is a concentrated, refreshingly citrus-driven wine. A true classic in style — and immensely popular.
