This delightful recipe perfectly combines the flavors of melted cheese and sweet fruit, creating a very simple yet memorable dessert or snack. And it doesn't take long to prepare either!
This recipe serves 1-3 people, depending on how hungry your fellow hikers are!
Fried Cheese and Fruit
- 1 white mold/blue cheese
- 2-3 fresh apricots, a handful of dried ones, or 1 nectarine
- 4 large strawberries
- Fresh thyme
- Olive oil
- Thick balsamic glaze
- Runny honey
- Good bread
- Quality red wine, e.g., Pierrevignes - Côtes du Rhône

Here's how:
Chop the fruit into small pieces, but leave a few larger pieces for garnish if you like. Use a sharp knife to make a couple of slits in the surface of the cheese. Drizzle olive oil in the center of the pan and place the cheese on top of the oil. Add the chopped fruit pieces and thyme around it. Sprinkle olive oil and thick balsamic glaze over both the cheese and the fruit. Cover with a lid or foil and let simmer over low heat for about 10 minutes, until the surface of the cheese feels warm and soft to the touch.
Once the cheese is melted, arrange the fruit you set aside on top and drizzle with a bit of runny honey. You can scoop the cheese-fruit mixture straight from the pan with bread like a dip. If needed, you can use a knife to open up the slits you made to get to the melted inside with your bread.

Where to find a good outdoor wine?
Choose a lightweight plastic bottle of quality red wine for your outdoor adventure, one that pairs especially well with smoky food. A plastic bottle won't break in nature and won't leak thanks to its screw cap.
