The drink is the result of a collaboration between Alexandre Gabriel and cocktail historian David Wondrich, who worked together to create a new drink for the Tales of the Cocktail festival. In sour drinks, lemon or lime juice brings acidity to the drink, which is balanced with something sweet\u2014in this case, agave syrup. Shake vigorously to create a nice foam. If you prefer, you can leave out the egg white entirely. You can strain the drink and serve it without ice, or pour it straight from the shaker into the glass with ice (dirty shaking).
